Sinai has amazing bio-diversity. Over 800 plant species in the south alone and in particular in the St. Catherine area. Many of the herbs have medical uses, the healing and nutritional knowledge of these plants has been carried and preserved by the Bedouin tribes for over 1500 years.

Some of these plants also have great insect-repelling properties. By placing a small quantity of dried herbs in a cloth or net bag and keeping in my drawers and cupboards, I have saved many of my sweaters and woolen items from the attention of the London clothes moths.

Dried herbs for teas and culinary uses are best stored in airtight glass jars and kept in a cool, dry place.

To make tea from either dry or fresh herbs: Boil water and pour over herbs. Cover in order to capture the beneficial oils back into the tea. Leave to steep for at 5 mins for dry herbs and 3 mins for fresh.

Uncover, drink slowly and breathe in the aromas which will also have a beneficial effect.

Herbs are sold in 25gm packs.
